Well, since I'm here...

Kevin’s Insane Salsa Dip

Yield: 2 servings

This recipe is a variation of that old quick salsa standby of mixing salsa and Velveeta cheese-like food to create a dip.

3/4 c. salsa verde (green salsa)
6 oz. Velveeta, cut into small cubes
1 1/2 tbsp. Hot Sauce From Hell (or similar habenero pepper-based sauce)
2 tbsp. sour cream

Combine all ingredients except sour cream into microwave-safe bowl and microwave for 2’30” on medium-high power, stirring periodically, until cheese is uniformly melted and salsa is smooth throughout. When cooking is complete, add sour cream and stir until thoroughly mixed.

Serve warm with a large basket of warmed tortilla chips to share. Dip will become thicker as it cools so keep it warm for as long as possible. For larger gatherings it may be more practical to double/triple the recipe and prepare the dip in a crock pot--simply turn it on low heat, and warm all ingredients except sour cream in bowl, stirring occasionally until melted, then add sour cream. Adjust crock temperature to WARM, and serve, stirring occasionally.

Dip is very spicy; if a cooler dip better suits your taste, prepare using 1/2 tbsp. sauce for less kick (Kevin’s Somewhat Self-actuated Salsa Dip), substitute an equal measure of jalapeno pepper sauce instead (Kevin’s Eccentric Salsa Dip), or omit a hot sauce entirely (Kevin’s Completely Pussified Salsa Dip).
